Sweet Potato Lentil Chili

Lots of you saw me post this on Instagram a few weeks ago and asked for the recipe so here it is! I was waiting to make it again to take better pictures but life got away… whatever its about the recipe right?

I made this recipe for a client who doesn’t like a lot of beans (toot). I wanted to give them a chili to have on a cold New York night to warm them up. Lentils are high in protein, fiber, easily digestibly and warming. Paprika, cumin and sweet potatoes also are warming and great for winter.

I loved it so much I made it for myself. I made mine in my Instant Pot and I made it for my client on the stove top. Both are delicious and easy to make!

Sweet Potato and Lentil Chili

Ingredients

  • 3 tsp olive oil

  • 1 yellow onion, chopped

  • 3 celery stalks, diced

  • 4 garlic cloves, minced

  • 1 tsp cumin

  • 1 tsp smoked paprika

  • 1/2 tsp chili powder (optional)

  • 1 cup lentils (I used a mix of lentils, any will work)

  • 2 medium sweet potato, cut into 1/2-inch pieces

  • 1 32oz. low sodium vegetable broth

  • 1 (14 oz.) can of diced tomatoes

  • 1/3 cup cilantro roughly chopped (more for topping)

  • Salt & pepper, to taste

Directions:

  1. Add oil, garlic, onion and spices to a large pot on medium-high heat. Cook and stir often of 5-8 mins until onions are translucent can it is fragrant.

  2. Add in celery and sweet potatoes with 1/2 cup of broth. Cook for 10 mins with the lid on so the sweet potatoes can soften a bit. If the sweet potatoes stick to the bottom of the pan add a bit more broth.

  3. Add in broth, lentils , cilantro and tomatoes. Cook covered on simmer for 20 mins until sweet potatoes are soft and lentils are cooked.

  4. OPTIONAL; take 1/4-1/2 of the soup to blend to create a more creamy texture. You can add more water if you a thiner soup. If you want it thicker cook for a few more min with the lid off.

  5. Top with avocado, more cilantro, sea salt and pepper.

FOR THE INSTANT POT

  1. Put everything in the pot. Set to Pressure Cook for 15 mins.

  2. Walk away until it beeps! *allow it to naturally release pressure. Will take about 10 mins
